Easy Chocolate Date Cookies with 3 Ingredients

Apparently, the chocolate belonged underneath the cookie this entire time.

Welcome back to Cravings, Covered — where we keep making tiny chocolate things and calling it preparation.

This week: inverted chocolate cookies. The cookie itself is made with just two ingredients — dates and almond flour — then sits on a layer of melted Funky Fat Chocs. Simple, made with real ingredients and considerably better than something this easy has any right to be.

And yes, the dates actually turn into a proper little cookie with a surprisingly good crunch. We were sceptical too.

Makes approximately 8 cookies.

How to make inverted chocolate cookies

  1. Soak the dates. Place the dates in boiling water and leave them to soak for 10–15 minutes.
  2. Make the date mixture. Drain the water and mash the softened dates until you have an almost smooth paste.
  3. Add the flour. Gradually mix in the oat or almond flour until the dough no longer sticks to your fingers.
  4. Preheat the oven. Set your oven to 180°C.
  5. Shape the cookies. Divide the mixture into approximately eight balls. Gently flatten each one and use a fork to press a cross into the top.
  6. Bake. Bake for 12–15 minutes, then leave the cookies to cool completely.
  7. Melt the chocolate. Melt the Funky Fat Chocs au bain-marie, then leave the chocolate to cool slightly until it thickens enough to hold its shape.
  8. Invert. Spoon eight small chocolate coins onto baking paper and place one cookie on top of each. Chocolate on the bottom. Trust the process.
  9. Chill. Refrigerate or freeze for up to one hour, until the chocolate has set.

That’s it. Dates and flour for the cookie, Funky Fat Chocs underneath, and a little time in the fridge before they’re ready to eat.

Now we’re already thinking about the next versions: matcha, cinnamon, maybe white chocolate. There are options.

As for making a batch and keeping them for the next three days? Technically possible. The chances of all eight surviving that long? Considerably lower.
