When the snack-attack hits, these 3-ingredient peanut crunch bars deliver that sweet-salty snap without the crash. Creamy peanut butter, ultra-crispy soy crispies, and a touch of sugar-free syrup come together in minutes — fridge does the rest. Slice, stash, and snack like a pro.
Ingredients
- 1 cup peanut butter (smooth, natural)
- 1 cup + 1/2 cup soy crispies
- 1/4 cup sugar-free syrup
- 1 bar of Funky Fat Milk Chocolate
Instructions
- Line a small loaf tin or square tray with parchment.
- In a bowl, mix peanut butter, syrup and soy crispies.
- Press the mixture firmly into the lined tin with a spatula.
- In a separate small mug melt the Funky Fat Chocolate bar in au bain marie or in 20 second intervals in the microwave (so it doesn't burn).
- Chill 45–60 minutes until set, then slice into bars or squares.
Make it Funky
- Swirl in 1–2 teaspoons Funky MCT Oil C8 & C10 for silky texture and steady energy.
- Finish with an extra drizzle of melted Funky Fat Chocolate and a pinch of flaky salt.
- Add-ons: chopped roasted peanuts, cacao nibs, or a handful of chocolate-covered superfoods.
