When the sweet tooth calls, this single-serve berry cheesecake answers with creamy texture, bright berries, and a snappy dark chocolate goji twist. It’s protein-forward from Greek yogurt and egg, naturally sweetener-optional, and perfectly portioned for a quick dessert or post-dinner treat. No crust, no fuss—just whisk, bake, chill, and enjoy.
Ingredients
- 150 g Greek yogurt
- 1 egg
- 1 tsp vanilla extract
- 1 handful fresh berries
- 2 tbsp Funky Fat dark choc goji berries
- Optional: sweetener of choice
Instructions
- Preheat oven to 180°C (350°F).
- In an oven-safe ramekin, whisk yogurt, egg, and vanilla until smooth; sweeten to taste if desired.
- Fold in fresh berries and dark choc goji berries.
- Bake 30–35 minutes until set and lightly golden on top.
- Cool completely, then refrigerate at least 2 hours.
- Dust with powdered erythritol before serving.
