Chocolate chip muffins with quark are exactly the kind of recipe we love: soft, fluffy, simple, and filled with chunks of Funky Fat chocolate. Perfect with coffee, as an afternoon snack, or as something easy to take on the go.

These muffins are made with low-fat quark, sugar substitute, and Funky Fat Foods chocolate. That makes them feel a little smarter than a standard muffin, without losing the joy. Because honestly, a muffin without good chocolate is a missed opportunity.

The best part? This recipe is easy. Everything comes together in one bowl, the chocolate gets chopped into chunky pieces, and after 25 minutes in the oven, the kitchen smells like we have our whole life together. Even if that is only partly true.

Why these chocolate chip muffins work so well

Quark gives the batter a soft, creamy base and helps keep the muffins moist. The sugar substitute keeps the sweet moment lighter, while pieces of Funky Fat Milk Choc bring that real chocolate chip bite.

Ingredients for 14 muffins

  • 250 g low-fat quark
  • 80 g sugar substitute
  • 4 eggs
  • 1 tsp vanilla flavouring
  • 250 g self-raising flour
  • 1 tsp baking powder
  • Pinch of salt
  • 100 g Funky Fat Choc, chopped into pieces

How to make them

  1. Preheat the oven to 190°C.
  2. Add the quark and sugar substitute to a bowl and mix well.
  3. Add the eggs and vanilla flavouring, then mix again.
  4. Add the self-raising flour, baking powder, and a pinch of salt.
  5. Mix until you have a smooth batter.
  6. Chop the Funky Fat chocolate into pieces and stir it through the batter.
  7. Divide the batter over a muffin tray.
  8. Bake for around 25 minutes, or until golden and cooked through.

Funky tip

Let the muffins cool slightly before removing them from the tray. They will hold their shape better, and the chocolate pieces will be perfectly melty but not too hot.
