Homemade Funky Protein Bars

Homemade snacks always have something special. You know exactly what goes in, you can choose clean ingredients, and you end up with something that tastes just as indulgent as a shop-bought treat. These Homemade Funky Protein Bars are the perfect example.

They are made with protein powder, berries, coconut, dates, and a very necessary layer of Funky Fat Foods Dark and Milk Chocolate. Our chocolate is made with no added sugar, sweetened with erythritol, and made with MCTs, giving these bars a rich chocolate shell with a cleaner ingredient profile.

They are great for prepping ahead, too. Keep a batch in the fridge or freezer for busy mornings, afternoon snack moments, or those times when only something chocolate-covered will do.

Homemade Funky Protein Bars

Makes 8 bars

  • 40 dates
  • 2 ripe bananas, optional
  • 150g protein powder, preferably unsweetened
  • 150g shredded coconut
  • 150g frozen blueberries
  • 150g frozen strawberries
  • 1 bar Funky Fat Dark Chocolate
  • 2 bars Funky Fat Milk Chocolate

Method

  1. Blend the dates and banana, then mix with the protein powder.
  2. In a separate bowl, mix the melted berries with the shredded coconut.
  3. Press the date, banana, and protein mixture into a tray.
  4. Press the berry and coconut mixture on top.
  5. Melt the Funky Fat chocolates and pour over the top.
  6. Freeze until set, then cut into 8 bars.

Keep them in the fridge or freezer and thank yourself later.
