Keto Chocolate-Covered Oreos

A classic childhood treat made healthy, sugar-free and low-carb.

Ingredients:

For the cookies:

  • 60 gr almond flour
  • 60 gr erythritol
  • 30 gr sugarfree cocoa powder
  • 1 egg
  • 30 ml olive oil
  • 1 spoon vanilla extract
  • 1 pinch of salt
  • 1/2 baking powder
  • Ingredients for the filling:
  • 80 gr butter, softened
  • 20 gr powdered erythritol
  • 1 spoon vanilla extract
For the chocolate filling:

3 bars Funky Fat Choc Dark

Instructions:

  1. Mix all the ingredients for the cookies. Flat the dough (5-6 mm) between 2 baking sheets and rest on the fridge for 20 min.
  2. Cut the dough wit a circular cookie cutter (5 cm diameter). Bake for 7-8 min 180C.
  3. Prepare the filling, mixing butter, vanilla, and powder erythritol.
  4. Add the filling between 2 cookies.
  5. Melt your Funky Fat Choc bars, and cover our "oreo’s" in chocolate.
  6. Let the cookies rest and enjoy.
