No added sugar banana bread with chocolate? Yes, please. This recipe by @my_fit_mommy_journey is simple, cosy and made with ingredients we actually love: oats, banana, almond milk, cinnamon and Funky Fat chocolate.
It is the kind of bake that works for breakfast, coffee breaks, snack prep or that moment when there are two ripe bananas on the counter and we all know they have one destiny. Banana bread. Always banana bread.
This version is made without added sugar and gets its sweetness from banana and chocolate. The oats make it feel hearty, the cinnamon gives it that warm homemade flavour, and the pieces of Funky Fat chocolate bring the best part: melty chocolate bites in every slice.
Why we love this banana bread
This recipe keeps things simple and minimally processed, with minimum ingredients and maximum comfort. It is soft, naturally sweet and easy to make as one cake or two mini cakes.
Use Funky Fat Dark Choc for a richer cacao flavour, or go for a softer chocolate moment with Funky Fat Milk Choc. Either way, it turns a simple oat banana bread into something that feels like a proper treat.
Ingredients
For 1 cake or 2 mini cakes:
- 250 g oats
- 2 bananas
- 2 eggs
- 240 ml almond milk
- 1 tsp baking powder
- Pinch of salt
- Pinch of cinnamon
- 1 tsp vanilla flavouring
- 50 g Funky Fat Foods chocolate
- Extra chocolate and oats for topping
How to make it
- Blend or mix the oats into a finer texture if preferred.
- Mash the bananas in a bowl.
- Add the eggs, almond milk and vanilla flavouring, then mix well.
- Stir in the oats, baking powder, salt and cinnamon.
- Chop the Funky Fat chocolate and fold it into the batter.
- Pour into one cake tin or two mini cake tins.
- Top with extra chocolate and oats.
- Bake until golden and cooked through. Baking time may vary depending on the size of the tin.
Funky tip
Let the banana bread cool before slicing. It helps the texture set and makes the chocolate pieces even better. Add a slice to a lunchbox, enjoy it with coffee, or warm it slightly for the ultimate cosy snack.
No added sugar. No compromises. Stay funky.
